It's also a bad idea if you want to build anything that's more complex than GNOME's single-purpose apps that lack all kinds of features. Building something as complex as a DAW would be a nightmare with libadwaita.
Libadwaita has been specifically designed for simple GNOME-style applications that only have one purpose and don't include many features. I wouldn't recommend it for complex project like a DAW.

I don't think there's a way to disable this in the official launcher. There are many launchers that look and feel pretty similar to the stock one though. I think Lawnchair is the best example. I wouldn't recommend Nova Launcher (https://lemmy.ca/post/19914345). You can also just get rid of all the Google bloatware altogether and install GrapheneOS.
For some reason, I used to drink this stuff a few years ago. Now I can't stand it at all.
