Made an awesome dish this afternoon of spicy Korean eggplant. It was a hit! The eggplant was nice and creamy, and the sauce had a nice heat to it. I'll definitely be making this again, and it's so cheap to make, which is also a win.
Recipe that I used is from here, https://www.youtube.com/watch?v=rfXK7vc-Z7A
This is basically the lentil flat bread, https://www.youtube.com/watch?v=RZTjR5OKBO8&ab_channel=FoodWishes I add more seasonings like cilantro, some paprika, or powdered onion and garlic. It isn't something that is good the next day.
I use this for my falafel, https://cookieandkate.com/crispy-falafel-recipe/ but, I soak my chickpeas for 2 days on the counter and never used the cinnamon.
I made baked falafel with red lentil flat bread for the wrap. I baked them just because it's easier then frying all these for a family but, still they are delicious. The lentil wraps are great with it as well. Honestly, 7-10 years ago if you told me that some of my favorite meals to make would be plant based.... I'd chuckle and dismiss it. I mean I still enjoy cooking meat but, yeah plants make super satisfying, cravable meals.
Wow! That is great, those look amazing. I hope they enjoy it and keep it up because they look like they know what they are doing. 👏👏👏
Thanks. As long as you give it time to cook and really soften the veggies. I only had 1 cup of lentils so I was half a cup short, but 🤷♂️.
Oh yeah, I think chillies would be great, add a nice warmth to the soup. It probably would work nice. I like the idea.
It's about to warm up out of soup season so I made a new one for me. It's butternut squash, cauliflower, lentil soup. It was funny because after I blended it with an immersion blender I tasted it and it tasted like it definitely was missing something, added the coconut milk and some lime juice and WOW that was it.
I used my own veggie broth for this. I didn't have red curry paste so I just used some powders I use for curries with a little extra paprika.
Here is the recipe I used for this.
https://www.abbeyskitchen.com/vegan-lentil-butternut-squash-soup/?utm_campaign=yummly&utm_medium=yummly&utm_source=yummly#recipe-video
It's chickpea flour, water, salt, black pepper, oil, rosemary and onions
It was a mix between https://www.themediterraneandish.com/farinata-recipe/ and this one https://www.youtube.com/watch?v=-vKnzKb60C4&t=3
This was my first attempt at making farinata. It could have used a little more bake time but it was great. It's simple but full of flavour I would definitely make it again and experiment with toppings.
The aquarium is amazing, wish we had budgeted more time for it. The facility it is at has a whole days worth of activity there. The Olive Mill is a pretty good pace to check out as well, specially if you like olive oil. I wanted to go, but didn't have time to visit Heard Museum.
Yeah, there was a nice period when Pidgin could easily handle all the chats. Then providers siloed their apps 🫤
Thank you. I tried to set them up to sync between my desktop and Android but no luck.
Do you sync your Joplin notes with Synching? Any tips?
I tried it this summer. It was slow and not that engaging. But, I'm willing to give it another try next summer in hopes of improvements.
Thanks! Here is the recipe for the vegetable broth, https://www.youtube.com/watch?v=CDWSZ4ZcnQE&t=10
I based the curry off of this, https://www.youtube.com/watch?v=NM-4tVL4Z-c&t=167 I think next time I make this wilting a bunch of baby spinach in this would be an amazing addition.
Made it with my own vegetable broth as well. It turned out great, would definitely make this again. Just didn't have cilantro and missed that.
Wife and I loved this episode, just so great. Hate that Jodie didn't have writers and stories as great as this. My wife did find a bit of a plot hole though. This story takes 15 years later right? Donna got married 15 years ago, assuming she got married not long after the meta crisis. So Rose should be 13 or 14 at the oldest. Rose clearly is in her late teens.
Take two, I think the first attempt had the dough too moist. Today's turned out very nice, I think
Thanks, first go at this recipe, trying to figure it out.
I have been just making the curry for a while, so pretty much all ingredients are what I would like them to be. Not sure about exact measurements. Curry: Two medium white onions, diced same amount of diced eggplant. Salt and pepper. Sautéed in oil. Clear the middle of the pan for the spices, I used curry powder, cumin powder, coriander powder, red pepper flakes, and a garlic ginger paste. Add a tin of diced tomatoes. Add about a cup and a bit of mango yogourt - I usually use coconut cream here but felt like switching it up. Let simmer.
Lentil balls: I boiled 1.5 cups of red lentils for 5 minutes, don't want them too mushy. In a food processor I added, a large carrot (cut into smaller pieces), an onion, garlic ginger paste, close to the same spices from the curry, and parsley (I was out of fresh coriander), and a bit of the yogourt. Blended until it was in small chunks. Mix with the lentils, smashing most of it. I formed into balls and placed onto a greased baking sheet. I cooked it in a pre-heated oven at 425*F for 12 minutes, flipped the lentil balls and mashed them down a bit and cooked for another 12 minutes.
This evening I made a curry that had mango yogurt in it and rather than making rice I made baked lentil balls, haha there is a better name for them, right? Something like kofte? Anyhow this dish was extremely affordable, packed with veggies and flavour.

Things are really quiet on here, guessing there are a lot more consumers than sharers. The #Leafs hashtag is a good follow on Mastodon, there are frequent posts and good bots sharing. Looking forward to lively conversations about the coming season. Go Leafs go
I made this olive oil cake for my wife's birthday. Recipe from, https://www.youtube.com/watch?v=CaG0A0r6Iq4&t=1
Today in Battleford, Saskatchewan, we had a street festival and at this event were several food trucks. We got Bao buns and spring rolls from one. The Bao on the left is a brisket filled one and the one on the right is pork belly... Wow, so good. Plus the weather was great for mid September here it was 28*C
We were gifted a bunch of tomatoes so I made this tomato loaf. I used this recipe, https://www.youtube.com/watch?v=KjEwRcTwU-g&t=1 I couldn't find sun dried tomatoes not in oil so I didn't use them, and pinenuts were crazy expensive so didn't use those either. I did add a whole clove of garlic and some Italian seasoning. Loved it, ate a whole loaf with the family once it cooled. I'm curious about adding bits of mozzarella into it next time.
This past winter I made a semolina loaf, really liked how it turned out and will be making another one soon.
Made a rub, did a 2 hour cold smoke then a 2 hour hour hot smoke. It was juicy and delicious. This time I didn't brine it but it still was super moist and tender.
The Night Oven Bakery in Saskatoon, Saskatchewan is amazing. We bought a sourdough loaf, a brioche loaf from there and ate this tasty treat while in the store.
It'sjulienne cut potato and sweet potato, deep fried. Covered with pulled pork, a sweet BBQ sauce then covered with shredded cheddar cheese.
I made smoked chicken lollipops today. They are a bit of effort but so worth it. Quickly they have become a family favourite. Thinking doing these up with turkey drumsticks would be very fun.
From Rankin Inlet, Nunavut, living in the Battlefords, Saskatchewan since 2008. Lucky to have the most amazing wife, and we have 3 wonderful daughters. An Inuk in treaty six territory. I love open source software, dabbling in graphic design and video editing, and cooking. I love the Leafs.
