The reply for Metalocalypse is dead on. It takes metal music tropes and runs with it. Think Spinal Tap.
Regular Show is an animated show about 2 best friend losers who work together and get into really weird hijinx. The voice acting is top-notch, special shout out to scoring Mark Hammil as a yeti. The writing is smart and nails the 30-something age bracket (during its run). Tons of throw back to 80s/90s culture. My wife and I still quote this show to this day.
Metalocalypse is about the world's greatest death metal band: Dethklok. It's animated, 15 minute episode, very gory, the band members are all idiots. They're so rich and popular that world governments see them as a threat.
Have a soft spot for British shows:
Peep Show.

It's so funny that even the name of the show becomes funny in this context.
"Hey what's your favorite TV show?"
"I think you should leave."
"Why?! What did I say?"

No plot, just jokes. Hilarious.
Letterkenny. My wife who grew up in Eastern Europe was baffled at how hard I was laughing and I had to explain that it was just barely an exaggeration of my experience growing up in rural South-Western Ontario.
If you're not from the area, you'll probably want to watch it with subtitles, because the dialogue is fast and the accents are strong.

I have a soft spot for The Goes Wrong Show. It's just farce & not for everyone, but has a great cast & some clever staging & prop work. Silly & fun.
The Righteous Gemstones had me with tears in my eyes on several occasions
