I think it's a spoof on the Western movie action sequence in which the hero leaps from the coach onto the backs of the horses, in order to rein them in.
I can't figure it out either, is he talking to the lady or the rabbit?
The internet seems to think it's because rabbits naturally hop so he's putting a jumping rabbit in a different, absurd context. I don't really get it though.
