Basically be comfortable where you are right now, you just started. Set yourself up for incremental and sustainable gains, the when you are able to try and hit the higher speeds.

Ah man day off so went to the Greek restaurant a couple doors down from ours & had probably the best Greek Salad, the 4 of us mopped up the dressing at the bottom with the pita and other home made bread, with the tatziki & baba also. Then shared a moussaka, then everyone else had the lamb and * had the Koftas with a light tomato puree on top, and a lentil puree under with some pistachio & almonds.
Topped it off with a yogurt mousse with pistachio & honey khatafi (shredded filo)
Many beers, a little siesta, then off to the beach for more beers & chopitos (little baby squiddies fried up with lemon)
I had a few black bean, pork carnita quesadillas and a LOT of sympathy for my wife
