I think you're over thinking it. After 6, teaching kids how to do things is like teaching excited adults how to do things, just with less swearing. Lay it out in simple terms, raise the bar as they get better, and remember that this is supposed to be fun. If you're worried about pop music, remember that this puts you in the perfect position to introduce them to new music too. Sure, you start with whatever they're listening to, then slip in a, "hey, this sounds a bit like [band name], you should give this a listen."

I'd highly suggest QIDI if you're not building from scratch. I got my X pro back in 2018 and not only is it still stupidly detailed, but it's an absolute workhorse. On top of that, they're the best customer service I've ever had. I've made a ton of mods to mine over the years and they've done everything from helping me flash custom firmware to recording video guides for reversing the spin on the motors. I really cannot stress how great they are and how well they understand the DIY nature of this hobby.

I'd like to second the suggestion of Monk. It's just a pretty decent show on its own but Tony Shalhoub really just makes the show excellent.
