The King Of Kong documentary definitely makes him seem like he cheated in DK using footage taped on an emulator, so I'm assuming at least some of the later accusations are true. It's also true that he is actually good at these games at a near-top level because he's done either real highscores or at least ones close to them in front of live audiences. But he likely cheats on top of that to maintain some of his records out of pettiness and shit.
The bigger OLED model for Switch 1 at 7" has a PPI of 200, which is higher than most TVs and gaming monitors. The Steam Deck only has an 800p-tall screen. The lack of clarity people saw on Switch is mostly likely the game not hitting the screen's native resolution in the first place. The 120hz kicks ass, but a 1080p screen is a total waste on Switch2.
I will never own one so I guess so, although maybe theirs are built better or aren't soldered to the mobo (probably are).

Also I swapped out my Switch joysticks with hall effect ones which wasn't that hard but having to do that at all is fucking stupid.

They have existed since the Sega Saturn. They don't use them because there's a small trade off between top-dead-center accuracy and not wearing out on hall effect sticks as well as a minor cost difference (and I think power use). Although tunneling magnetoresistance is supposed to use less power and be more accurate overall while having the other hall effect benefits. The only draw back is that hall effect sticks are at the mercy of the springs in the stick since you need those to return the stick back to center, but that's about it.
