Are the disbelievers going to hellfire forever, and if so, wouldn’t this contradict Allah being All-Merciful?

Disbelievers aren't going to hell. Allah knows what's in your heart. Being a disbeliever or ignorant isn't great, but Allah judges the character of your heart, not what's in your brain.
And most people have a good heart.

All religions are full of contradictions. The key is hating everyone that isn't part of the group enough that you can overlook the lies.
One can have mercy and justice at the same time.
