I love it when the stuff suspended in the miso separates just right and you can see the little convection cells in action. Definitely the most interesting soup to watch (and tasty!)

  Tomato Soup with cheese - watch the cheese float up in little globs
  Motza ball soup - watch the ball grow in real time
  Traditional gumbo - watch it bubble up from the heat freshly served as it releases that amazing smell
  Wonton soup - watch diced green onions dance around as they are gently moved by the heat
  Mexican Tortilla soup - the tortilla strips dance around on their own
  I could only think of top 5. Sorry.
Thus hurts me in so many ways. All indirectly.
