If you're playing the plasma deck you'll be fine. Cheese and its modifiers work better the more you have, even if you have multiple types, but only on chips, not on multipliers.

You have to swap the order of the Cheese Joker with Cheese Joker to maximize the mult.

One of the top two cheese jokers let you do straights and flushes with only four cards, the other lets all cards played score. I would do a flush on the four pepper jack slices and include the shiny foil cheddar slice on the far left. That should get you where you need to be.
